SCHIOPPETTINO
D.O.C. COLLI ORIENTALI DEL FRIULI

Schioppettino, or Ribolla Nera, is indisputably a native Friulian varietal. It probably originates from the Prepotto district.
Garnet ruby red colour with tinges of violet. The nose is redolent of blackberry, raspberry and bilberry. Dry, zesty flavour with good structure and plenty of character. Bottle ageing will bring out an elegant bouquet of autumn leaves and spices.

HARVESTING By hand in cases with bunch selection. Perfectly ripe grapes.
VINIFICATION Maceration on the skins for about fifteen days and fermentation at controlled temperatures between 25-28 °C with frequent pumping overs.
AGEING 12 months in barrique, then in the bottle for 20 months before release.
BOTTLES PRODUCED no. 3,000 bottles of 0,75 l
SERVING SUGGESTIONS Wild boar, roe deer, lamb, wild fowl, poultry, grilled red meat, mushrooms.
